Getting To the WFC 2014

How does a team get to the World Food Championship? Well its easy. You win a regional competition and our event was a whole hog competition.

The task of winning a competition is a little harder then one may think. There are always very talented Pit-Masters ready to take a title, so winning is never assured.

One of the things we do is make sure we have the very best quality of products. For us the pork is always Willowgrove Hill Premium Pork. When competing, using the best available product is a start. Combined with a very stable cooker which the heat and smoke can be controlled to ensure the delicate handling of our pig (always female) creates the winning combination.

The cooker set for 235(f) and in 14 hours this is our end product.

Team Canada NOTWA donationYou will notice a very beautiful skin,  (or crackling for my daughter, Julia) and the most tender meat a judge will ever see in a turn in box.  Of course there are secret rubs, injections and little tricks of the trade to get that pork to temperature and not dry out in the process.

This is what will get you to a World Championship.
